December newsletter – From the cellar

December newsletter – From the cellar

If the harvest is one of the most intense time of the year, the cellar work that follows is no less. All efforts happen so that the grapes beauty, the characteristics of the vintage and those of the terroir, not only are not affected by the process but are instead highlighted, refined, so that every wine at the end shows his own personality.

We started the harvest in September with Dolcetto grapes. Who follows us, knows perfectly how much we care for this variety and how much we are committed to give you a wine that owns the pleasantness of fruit, drinkability and the sense of joy that only sharing wines with our loved ones can give us. And our Dolcetto 2020 is exactly so: bright red with violet tones, deliciously fragrant on the nose with crunchy red fruits and flowers, and tons of freshness with define tannins. The harvest proceeded with our Nascetta, whose fruits power, finesse and sapidity will conquer you, as well as pass with honor the test of time: do not be afraid of leaving some bottles hidden in your cellar, you might end up being nicely surprised! The bond between this wine and Novello’s terroir becomes always more stark, fruit, flower and minerality come together to create a wine with a great territorial character.  After the due attentions in the vineyards, both Barbera Bricco dei Merli and Barbera Pre-Phylloxera gave us huge satisfaction and who had the chance to stop by at the winery while pressing or racking has been impressed by the perfume intensity and the bright color of the most. These entail pleasant wines, with great structure and elegance, high acidity and a good alcohol content which reflect the vintage trend.

Coming to the Nebbiolo, at the harvest moment grapes showed optimal figures, due to the favorable climate of September, with sunny days, mild temperatures and very cool nights. Barolo’s fermentations, with following maceration with sub-merged cap, have been quite long so to extract all flavors, colors compound and tannins which will give complexity and length to the wines. With alcohol content slightly higher than last year, the freshness has remained intact thanks to the acidity, perfectly in balance until the excellent ripening.

The journey of our Barolo 2020 just started, but we have already all premises for great wines, true ambassadors of our Ravera Cru.
